Skinny Chicken Queso
Yield: 4 servings
Ingredients:
12 oz. shredded, cooked chicken breast
1½ cups reduced-fat, shredded sharp cheddar cheese
¾ cup low-fat, plain Greek Yogurt
4 tbsp reduced-fat cream cheese, softened
1 cup diced tomatoes with green chilies
½ cup chopped cilantro (optional)
1, 1-lb. bag mini sweet peppers, halved lengthwise, stems and seeds removed
2½ cups celery sticks (about 13 oz.)
Directions:
Preheat oven to 350⁰F.
Combine all ingredients except the celery and bell peppers in a bowl, and pour into a lightly greased casserole dish.
Bake for 20 minutes until heated through.
Serve hot with halved mini sweet peppers and celery sticks.
Stuffed Mushrooms
Yield: 1 serving
Ingredients:
8 ounces Baby Bella mushrooms
1 cup moderate fat mozzarella cheese
1/2 cup chopped spinach
1 clove garlic
Salt and pepper to taste
Directions:
1. Preheat oven to 350° F.
2. Heat large skillet over medium-high heat with a few sprays of Pam.
3. Add mushroom stems and spinach; cook, stirring frequently, for 5 to 6 minutes until tender.
4. Add garlic and season with salt and pepper (if desired); cook, stirring frequently, for 1 minute.
5. Add cheese; mix well.
6. Evenly fill mushrooms with spinach mixture.
7. Place mushrooms on a large baking sheet. Evenly top with mozzarella cheese. Bake for 20 to 25 minutes, or until bubbly.
Broccoli Cheese Casserole
Yield: 1 serving
Ingredients:
1/4 cup egg beaters
1 1/2 cups broccoli
4.5 oz 1% cottage cheese
1/4 tsp Mrs dash garlic and herb seasoning
1/8 tsp salt
1 tbsp grated parmesan cheese
1/2 cup shredded reduced fat cheddar cheese
1/2 tbsp light butter
Directions:
Preheat oven to 350 degrees. Combine all ingredients in a bowl except parmesan cheese and shredded cheddar cheese. Pour into a casserole dish sprayed with non stick cooking spray. Bake for 40 min. Sprinkle cheddar cheese and parmesan cheese on top. Bake an additional 20 minutes.
Crockpot Beef Stew
Yield: 4 servings
Ingredients:
1.5 lbs lean beef, cut into chunks
1/4 cup onion, diced
1 cup celery, chopped
3 C green beans-chopped into bite sized pieces
1 can 14.5 oz diced tomatoes (less than 5g carbs)
2 Tablespoons beef stock base
1/2 teaspoon salt
2 cloves garlic, minced
1/2 C apple cider vinegar
1/2 Tablespoon Worcestershire sauce
Directions :
Add 1 1/2 cup water before cooking
Low 6-8 hours, high 4 hours
